Red rice pigment, also known as black rice pigment, black rice red pigment, is a natural pigment extracted from the rice bark of red rice and black rice, using modern biotechnology. The main component is centaurin-3-glucoside, which belongs to flavonoid anthocyanin compounds.
Red rice red natural pigment from black rice skin as raw material, through degreasing and weakly acidic aqueous solution to extract the pigment, fine, concentrated, etc., easy to dissolve in water, ethanol, good stability, light resistance, heat resistance, but sensitive to oxidants, mainly used as colorant (red), for drinks and other acidic food.
