Glutamic acid, is an acidic amino acid. It contains two carboxyl groups within the molecule and is chemically known as α-aminoglutaric acid. It is a colourless crystal with a fresh taste, slightly soluble in water.
Glutamic acid (2-aminoglutaric acid) has a levo-, dextro- and racemic form. L-glutamic acid, or L-glutamic acid, is a squamous or powdered crystal that is slightly acidic and non-toxic. Slightly soluble in cold water, readily soluble in hot water, practically insoluble in ether, It sublimates at 200°C and decomposes at 247°C-249°C. Density 1.538g/cm3, rotational luminosity +37~+ 38.9 (25°C).
